Very good banana muffins

Ingredients:

  • 3 or 4 ripe bananas (mashed)
  • 1/3 cup melted coconut oil (or any neutral oil)
  • 1/2 cup brown sugar (or coconut sugar)
  • 1/4 cup plant-based milk (almond, soy, oat, etc.)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 1/2 cups all-purpose flour (or whole wheat flour)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions:

Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

Mix wet ingredients: In a large bowl, mash the bananas, then stir in melted coconut oil, brown sugar, plant-based milk, and vanilla extract until combined.

Add dry ingredients: Sprinkle in baking soda, salt, and cinnamon, then gradually add the flour. Stir until just combined. Avoid overmixing.

Add mix-ins (optional): Fold in chopped walnuts or chocolate chips.

Bake: Pour the batter into the prepared loaf pan and bake for 50-60 minutes (20-25 minutes for muffins), or until a toothpick inserted into the center comes out clean.

Cool: Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
